Racking refers to the process of transferring wine from one vessel (tank or barrel) to another using gravity rather than a pump so as to not disrupt the liquid. Also known as soutirage or soutirage traditionel in France, it is carried out repeatedly during the winemaking process, particularly after primary fermentation, to separate clear liquid from sediment.
