GSM
GSM is the acronym for Grenache, Syrah, and Mourvèdre – a popular red blend from southern Rhône. Grenache brings juicy red fruit and warmth, Syrah contributes spice and structure and Mourvèdre adds earthy depth. Together they produce a wine that is both bold and balanced found under labels such as Côtes du Rhône and Châteauneuf-du-Pape. The blend has since found a new home in Australia, Spain and California.

Aging is a post fermentation process where wine rests in barrels (mainly oak) or bottles to undergo chemical changes that improves stability, develops complex flavors and clarifies the liquid.
Flavonoids
Flavonoids are natural polyphenolic compounds gotten from grape skins, stems and seeds. They are found in high concentrations in red wine.
