Bellini

DEFINITION

Bellini

The Bellini is a sparkling wine cocktail created by Giuseppe Cipriani in Venice, which combines Prosecco with white peach purée. It has a light pink hue, displaying fresh fruit notes and a crisp flavor, averaging around 7% ABV. Bellini is often served chilled in a Champagne flute or coupe glass and some variations replace the peach with strawberry (Rossini), mandarin (Puccini) or pomegranate (Tintoretto).

Did you know? The original recipe created by Giuseppe Cipriani around 1948 often included a tiny dash of raspberry juice or purée to enhance the pink color.
